Best Chili Recipe

If you’ve ever wondered why some chili tastes flat while others taste like they’ve been lovingly crafted by a master chef, the secret usually lies in the foundation. This isn’t a dump-and-run recipe (though it’s wonderfully easy to put together). This is a symphony of bold ingredients built step-by-step to maximize flavor at every turn.

It all starts where the best savory dishes always begin: bacon. By rendering down four strips of chopped bacon right in your pot, you aren’t just adding a touch of smoky crunch later—you’re creating liquid gold. That bacon fat becomes the cooking medium for a vibrant, aromatic trifecta of diced yellow onion, sweet poblano pepper, and red bell pepper.

Once those veggies have softened and soaked up all that smoky bacon goodness, we add the garlic and your choice of ground beef or ground turkey, browning it to juicy perfection.

Now, let’s talk about the spice rack, because this is where the magic really happens. We’re skipping the generic store-bought packet and mixing a robust blend of chili powder, chipotle chili powder (for that irresistible campfire smoke), smoked paprika, cumin, onion and garlic powders, a touch of brown sugar to balance the acidity, and just a tiny kick of cayenne if you like to live on the wild side. Toasting these spices right in the meat and veggie mixture for a minute unlocks their essential oils in a way that simply simmering in liquid can’t match.

Finally, we build the ultimate broth. We’re talking rich beef broth, tomato paste, Worcestershire sauce for a deep umami punch, fire-roasted diced tomatoes for char-grilled flavor, mild green chiles, and a hearty double-hit of texture with light red kidney beans and black beans.

Whether you’re prepping for Sunday game day, feeding a hungry family on a Tuesday night, or simply craving the ultimate bowl of comfort food, this chili delivers on every single front. It’s smoky, slightly sweet, packed with savory depth, and endlessly customizable with your favorite toppings (think sharp cheddar, fresh cilantro, sour cream, and avocado).

Grab your favorite heavy-bottomed pot or Dutch oven, crisp up that bacon, and let’s make some chili.

Ingredients

  • 4 strips uncooked bacon, chopped
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 large poblano pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef (or ground turkey)
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder
  • ½ tablespoon chipotle chili powder
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • ¼ teaspoon cayenne pepper, optional
  • 1 ½ cups (355ml) beef broth
  • 15.5 oz can light red kidney beans, lightly rinsed and drained
  • 15.5 oz can black beans, lightly rinsed and drained
  • 14.5 oz can diced fire roasted tomatoes, undrained
  • 4 oz can green chiles
  • 3 tablespoons (50 grams) tomato paste
  • 1½ tablespoons Worcestershire sauce

Topping Ideas

  • Sour cream
  • Avocado
  • Shredded sharp cheddar cheese
  • Crunchy corn chips or tortilla chips
  • Diced green onions or  fresh cilantro

Step-by-Step Instructions

Step 1: In a large, heavy-bottomed Dutch oven or soup pot over medium heat, add your chopped bacon. Cook, stirring occasionally, until crisp and the fat has rendered out. Remove the cooked bacon with a slotted spoon and set it aside on a paper towel-lined plate (leave the bacon grease in the pot!).

Step 2: Turn the heat up to medium-high. Add the diced yellow onion, poblano pepper, and red bell pepper to the hot bacon grease. Cook for 4 to 5 minutes, stirring frequently, until the vegetables begin to soften and the onions turn translucent. Add the minced garlic and cook for another 1 minute until fragrant.

Step 3: Add the ground beef (or ground turkey) to the pot with the vegetables. Break it apart with a wooden spoon and cook until completely browned and no pink remains.

Step 4: Stir in the brown sugar, chili powder, chipotle chili powder, smoked paprika, cumin, onion powder, garlic powder, black pepper, and kosher salt (and cayenne pepper, if using). Stir continuously for 1 to 2 minutes.  Cooking the spices directly in the meat and fat “blooms” them, unlocking their deepest flavors.

Step 5: Pour in the beef broth, light red kidney beans, black beans, fire-roasted tomatoes (with their juices), green chiles, tomato paste, and Worcestershire sauce. Stir everything together and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for at least 30 minutes(though letting it simmer on low for an hour will make it even better!). Stir occasionally to ensure nothing sticks to the bottom. Stir your crispy bacon back in during the last 5 minutes of simmering, or save it to use as a crunchy topping.

Step 6: Ladle your rich, smoky chili into warm bowls. Top generously with a dollop of cool sour cream, a handful of shredded cheddar cheese, and a handful of tortilla (or corn) chips for that essential crunch.

Why This Is the Best Chili Recipe

What makes a chili truly legendary? It all comes down to layers of flavor. Here is why this recipe stands out from the rest:

  • The Secret Weapon (Bacon): We start by rendering chopped bacon. Not only does this infuse the entire base with smoky, savory goodness, but the bacon fat is also used to cook down the aromatics.
  • Fire-Roasted Ingredients: Instead of standard canned tomatoes, using  fire-roasted varieties adds an incredible charred, campfire depth to the dish.
  • The Dual-Chili Powder Method: Combining standard chili powder with chipotle chili powder delivers a rich, slightly sweet, and complex fruitiness that elevates the dish from “good weeknight dinner” to “award-winning chili cook-off contender.”
  • The Perfect Balance: A touch of brown sugar balances the acidity of the tomatoes, while Worcestershire sauce dials up the umami.

Tips for Success

  • Make Ahead: Chili actually tastes better on the second day. The flavors continue to marry overnight in the fridge. Feel free to make this a day in advance and reheat it on the stove before serving.
  • Freeze It: This recipe freezes like a dream! Let it cool completely, transfer it to freezer-safe bags or containers, and freeze for up to 3 months.
  • Adjust the Thickness: If your chili gets too thick while simmering, simply splash in a few extra tablespoons of beef broth or water.
