What You’ll Need (For 2 Cakes):

For the Cookies:

  • 4 tablespoons (57 grams) salted butter, softened
  • 2 tablespoons  (25 grams) granulated sugar
  • 1/4 cup (57 grams) packed light brown sugar
  • 1 large egg yolk, room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup (63 grams) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon kosher salt
  • 1/4 cup (42 grams) chocolate chips

For the Chocolate Ganache:

  • 1/4 cup (60 grams) heavy cream
  • 1/3 heaping cup (65 grams) semi-sweet chocolate chips

Instructions:

Step 1: Make the Chocolate Ganache

  1. In a microwave-safe bowl (I like to use a small glass measuing cup).  Heat until milk is steaming hot, not boiling.
  2. Add the chocolate to the hot milk and let it sit for 2 minutes to melt the chips.
  3. Stir with a spoon until the ganache comes together.  Set aside to cool slightly and thicken.

Step 2: Prepare the Cookie Dough

  1. Preheat your oven to 350°F (175°C).  Grease two ramekins (approximately 6-8 ounce size).
  2. In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg yolk and vanilla extract.
  4. In a separate bowl, whisk together the flour and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.

Step 3: Assemble the Molten Cakes

  1. Divide the cookie dough evenly between the prepared ramekins.  Gently press the dough down to create an even layer.
  2. Make a small well in the center of each cookie dough portion.
  3. Spoon approximately 1½ – 2 tablespoons of the chocolate ganache into each well.  Save extra gananche to pour over top.  This is optional.  You can dip some strawberries in it or pour over some ice cream.  Use your creative immagination 😉.
  4. It is optional to refrigerate the prepared cakes for an hour or until you are ready to serve them.  You are going to want to eat them right after they a baked.

Step 4: Bake and Enjoy!

  1. Bake for 15-18 minutes, or until the edges of the cookies are golden brown.
  2. Let the cakes cool in the ramekins for a few minutes before serving (this helps them set slightly).
  3. Run a knife around the edges of each cake to loosen them from the ramekins.
  4. Invert the cakes onto plates, or serve directly from the ramekins.
  5. Garnish with a dusting of powdered sugar, a scoop of vanilla ice cream, or some colorful sprinkles if you’re feeling festive!

Tips & Variations:

  • Don’t Overbake: The key to a molten center is to underbake slightly. Keep a close eye on the cakes and remove them from the oven when the edges are set but the center still seems a bit soft.
  • Chill for a Richer Flavor: If you have time, chill the cookie dough for 30 minutes before baking. This will allow the flavors to meld together and create a richer-tasting cookie.
  • Get Creative with Add-Ins: Add chopped nuts (walnuts, pecans, or almonds), a pinch of sea salt, or even a drizzle of caramel to the cookie dough for extra flavor and texture.
  • Experiment with Chocolate: Use different types of chocolate chips in the dough or ganache for a unique flavor profile.

These Chocolate Chip Cookie Molten Cakes are sure to become your new go-to dessert for special occasions or whenever you’re craving a sweet treat.  So gather your ingredients, preheat your oven, and get ready to indulge in a warm, gooey, chocolatey masterpiece!  Enjoy!
