Christmas Mini Egg NYC Cookies: One of Santa’s Favorite Treats!

As the holiday season approaches, festive traditions come alive, and nothing embodies the spirit of Christmas quite like baking delicious cookies. Among the myriad of festive treats, one cookie stands out as a favorite of Santa Claus himself: the Christmas Mini Egg NYC Cookie.  This delightful confection combines the chewy charm of classic NYC cookies with the colorful indulgence of mini chocolate eggs, making them the perfect festive treat to leave out for Jolly Ole’ Saint Nick on Christmas Eve.

The Allure of NYC Cookies

New York City is famous for its vast culinary landscape, and cookies are no exception.  NYC cookies are typically thick, chewy, and chock-full of delicious add-ins—think chocolate chips, nuts, and a sprinkle of salt for that perfect balance of flavors.  They boast an irresistible texture that is crispy on the edges and soft in the center.  So, what better canvas than this beloved cookie to dress up in Christmas attire with vibrant mini eggs?

A Festive Twist: Mini Eggs

Mini chocolate eggs are synonymous with the Easter holiday (check out my recipe), but their colorful shells and creamy chocolate centers make them a delightful addition to any festive cookie.   I used Cadbury’s milk chocolate mini snowballs in this recipe.  The red, green and white are perfect for these festive treats!

The Recipe: Creating Christmas Mini Egg NYC Cookies

Ready to make Santa’s favorite cookies?  Gather your holiday spirit and let’s get baking!

Ingredients:

  • 2 cups (290 grams) all-purpose flour
  • 3 tablespoons (24 grams) corn starch
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 10 tablespoons (140 grams) unsalted butter, room temperature
  • cup (100 grams) light brown sugar, packed
  • cup (75 grams) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla 
  • ½ cup (100 grams) chocolate chips
  • 1 cup (180 grams) mini eggs (crushed or whole for texture)
  • Extra mini eggs for topping cookies before baking

    Instructions:

    1. Whisk together the flour, corn starch, baking powder, baking soda and salt in a large bowl.  Set aside until ready to use.
    2. To break up the mini eggs I placed them in a large plastic bag and smashed them slightly.  Try to be gentle with this process,  you don’t want to end up with crumbs.  Save the aggressive pounding for your meat tenderizing😁.
    3. Add the butter, light brown soft sugar and white granulated sugar to the bowl of a stand mixer and cream on medium speed for 1 (one) minute using the paddle attachment.  This can be done using a hand held mixer too.
    4. Add the egg and vanilla and mix just until combined.
    5. Add the flour mixture and mix on medium speed just until the flour is mixed in.  The dough will have a crumbly texture.
    6. Add the chopped mini eggs and chocolate chips and mix in until they are distributed in the cookie dough. Do not over mix!
    7. Scoop dough into 12 balls (75 grams each), and place on parchment lined baking pans.
    8. Once the dough is rolled and weighed, add the extra mini eggs into the tops of the cookie dough balls.  Chill the cookie dough for at least 4 hours or up to overnight.  
    9. Preheat oven to 375°F (190°C)   Place 8 cookie mounds per cookie sheet.  The cookies won’t spread much, but you want to leave some space between the cookie dough.  See photos ↓
    10. Bake the cookies for 12-14 minutes.  Do not over bake.
    11. Once they are baked, leave them to cool on the cookie sheet for at least 15 minutes.  Transfer the cookies to a cooling rack.  Enjoy!!

 

Leaving Out for Santa

As you prepare for Christmas Eve, don’t forget to leave a plate of these festive cookies along with a tall glass of milk for Santa.  After a long night of delivering gifts, he’ll surely appreciate the delightful combination of chocolate and chewy goodness.  The vibrant colors of the mini eggs are not only enticing for kids but also an invitation for Santa to enjoy a sweet break before heading off to the next home.
